Food industry

In the food industry, gelatin is used in a wide variety of products such as:

  • Confectionary: Gummy bears and similar sweets, marshmallows, fruit chews and toffees, as a binder in tablets and as a film forming agent in coated articles. Aimed especially at confectionary products, PB Gelatins/PB Leiner is very proud to offer its customized solution SWIFTGEL®
  • Dairy and desserts: Yoghurts, ready-to-eat desserts, mousses, ice cream, low fat spreads and, of course, the typical ‘gelatin desserts’ or table jellies
  • Savory: It is most commonly used in aspics and savory jellies, but also e.g. in savory mousses and in (canned) meat products, fish and frozen meals

Other food industry uses where gelatin is applied include the following:

  • Micro-encapsulation of flavors, colors and vitamins
  • As a stabilizer in cream fillings for frozen baked products
  • As a stabilizer in the manufacture of various types of icings and glazes
  • As a thickener in soups, sauces and gravies
  • As a clarifying agent for wines and juices​
